Italian Omelets

Ok you want an easy breakfast tomorrow to start the new year.
But you also want it to be real tasty and filling. Did I mention
you want it to be easy to fix. You can do some of the prep for
this today, so tomorrow will be a snap and something you can throw together
will you’re drinking your first cup or two of coffee.

Do this today
Peel and dice (large dice) a couple or more Potatoes.
Boil until they are still firm but cooked.
Drain and cool.
Cook up some breakfast sausage, till almost done.
Cool.
Wrap both and put in the refrigerator.

Italian Omelet Breakfast
This is for one omelet or breakfast, if you need more just make more.

Omelet
2 eggs
2 tablespoons milk
� teaspoon Italian seasoning
1 slice Mozzarella cheese
1 slice provolone cheese
vegetable oil or bacon fat

Sides
Potatoes you cooked yesterday
Sausage from yesterday
Bacon
Toast

Putting it all together
Cut sausage into bite size pieces, add to potatoes
Cook bacon in frying pan till desired doneness.
Remove the bacon and place potatoes/sausage in pan
While potatoes are cooking crack the eggs into a bowl and add the milk and Italian seasoning.
Preheat another pan over medium heat with butter or bacon fat in it.
Using a fork whip the egg mixture till all ingredients are well mixed, should be a yellow
color from the yolks. While you are still whipping with the fork, pour into the preheated pan. While the omelet is cooking, turn your oven on broil.
When egg has cooked almost all the way through, remove from burner and place in oven under the broiler.
Keep an eye on it, and when it has firmed on top, remove to place cheese on one half of the omelet. Place back under the broiler till the cheese melts. Remove from broiler and using a spatula fold the empty side of the omelet onto the side with the cheese on it.
Transfer to a plate, add the potato’s to the side with your toast.
Eat, drink coffee or tea and get ready to take a nap.
