Cheese Omelet

Like the Italian Omelet the cheese omelet is easy to make and just as good for a dinner omelet as it is a breakfast omelet.
I really like them for breakfast with a side of toast and bacon.

2 eggs
2 tablespoons milk
grated or sliced cheese of your choice
S&P to taste
dab of butter

Beat eggs and milk together in a bowl till well mixed.
Heat butter in medium frying pan over medium heat.
When butter has melted add egg mix to pan.
Shake pan back and forth for a couple of minutes to incorporate air in to the eggs.
When eggs are cooked almost completely remove from heat and place cheese evenly on top.
Turn on your oven broiler and place pan under broiler till cheese melts.
Remove and fold onto plate, add S&P to taste and dig in.

Hot Crab Dipping Sauce


This is an excellent dipping sauce for any party. You can serve it hot or cold and it is perfect for crackers or toast fingers.
You can aso use it for a cold spread.

8 ounces cream cheese
3 tablespoons mayonnaise
2 tablespoons white wine
1 teaspoon dijon mustard
1/2 teaspoon sugar
1/4 teaspoon salt, or to taste
1 73/4 ounce can crabmeat, drained and flaked

In a sauce pan over low heat, combine cream cheese, mayonnaise, wine, mustard, sugar, and salt.
Cook stirring, until blended and heated through.
Stir in crab meat and keep warm.
Will keep for 2 to 3 days in refrigerator.
Yeilds 2 cups
