German Cheesecake

While I’m on this German cake recipe kick, I have to share this one with you.
There was a member of the country club I worked at who had clients visiting often from Germany. This German cheesecake was always requested by them as it reminded them of home. It takes a little time to make, and I guess it wouldn’t fall into the easy recipe category. But it is worth the effort and if you want to try something a little different that is so deliciously good you have to give it a try.

Rich Biscuit Dough
1 cup flour
� teaspoon baking powder
� cup sugar
2 tablespoons butter
1 egg yolk
2 tablespoons milk

Mix flour, baking soda, and sugar together.
Rub in the butter with your fingers.
Mix egg yolk and milk together and add to dry ingredients, blend thoroughly.
Butter or grease a nine inch square or spring form pan.
Roll out dough and press into bottom of pan, it is ok to bring it up the sides of the pan.

Filling
4 cups cottage cheese
4 lightly beaten eggs
1 cup plus 1 tablespoon sugar
� cup melted butter
1 cup heavy cream
1 tablespoon cornstarch
1 teaspoon vanilla extract
� teaspoon almond extract
� teaspoon salt
� cups raisins lightly floured

Press cottage cheese through a strainer to remove moisture.
Combine the cottage cheese with all the other ingredients except the raisins.
Gently add the raisins.
Pour mixture into the pan.
Bake for 15 minutes at 450 degrees, turn down oven to 375 degrees and bake for an additional hour. Cool and serve.

German Apple Cake

I like to think all the recipes I have here are good. This German Apple Cake recipe is flat out great. As I like to say, �that’s good eaten there�. You can eat it as it is from the oven or you can kick it up by pouring the Calvados sauce over the top.

� cup melted butter
1 cup sugar
2 eggs
1 cup flour
1 teaspoon baking powder
1 teaspoon vanilla extract
� cup sugar
1 � teaspoon cinnamon
4 or 5 tart apples Granny Green Smith are best

Preheat oven to 350 degrees, and grease an 8×8 square baking dish.
Combine the melted butter, 1 cup sugar, and 2 eggs in a mixer and beat thoroughly.
Add flour, baking powder, and vanilla extract, beat till well blended.
Spread evenly in baking dish.
Combine � cup sugar and cinnamon.
Peel and core apples, then slice into thin slices. Save apples peels for sauce.
Coat evenly with sugar/cinnamon mixture.
Arrange apple slices on top of batter in overlapping rows, pressing lightly into batter.
Bake one hour till done.

Calvados Sauce

1 quart heavy cream
2 cups apple cider
2 tablespoons Calvados (apple brandy) optional
apple peels

In a heavy sauce pan heat apple cider and apple peels.
Reduce to 1 cup.
Strain to remove the apple peels.
Add heavy cream and reduce to half volume.
Stir in Calvados.
While still warm spoon over Apple Cake.
If you refrigerate the calvados sauce it will harden into an apple butter you can spread on toast.

Blackie Cake

This is one of those cakes that everyone will like.
Blackie cake is moist, light, and delicious.
Naturally it is easy to make and it makes a great snack
as well as a great desert.

3 cups flour
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking soda
12 tablespoons (� cups) vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla extract
2 cups water
1 teaspoon salt

Mix all ingredients together, batter will be very thin.
Pour into an ungreased pan (large loaf pan)
Bake at 350 degrees for 35 minutes.
Cool, and sprinkle with confectionery (10x) sugar.
